Ingredients: 1 1/4 cups all-purpose flour. 1/2 cup confectioners' sugar. 1/4 teaspoon salt. 1/2 cup unsalted butter, chilled and cut into small pieces. 1 cup salted peanuts, chopped. 3/4 cup light corn syrup. 3 large eggs. 1 teaspoon vanilla extract. 1/4 teaspoon salt.
Instructions: Set the oven to 350F 175C and heat it up. Put flour, confectioners' sugar, and salt in a food processor and blend them together. Pulse in the cold butter pieces until the mixture looks like coarse crumbs. Spread the dough out evenly in a 9-inch tart pan with a bottom that can be taken off. Press it up the sides as well. Cover the crust with chopped peanuts. Mix corn syrup, eggs, vanilla extract, and salt in a medium bowl with a whisk until everything is well mixed. Spread the mix on top of the peanuts in the tart shell. Put it in the oven and bake for 35 to 40 minutes, or until the filling is set and golden brown. Before serving, let it cool all the way down on a wire rack.
