Ingredients: 1 cup quinoa. 2 cups water. 2 boneless, skinless chicken breasts. 1 cup frozen peas, thawed. 1/2 cup crumbled feta cheese. 2 tablespoons olive oil. 2 tablespoons lemon juice. 1 teaspoon garlic powder. Salt and pepper to taste. Fresh parsley for garnish optional.
Instructions: Rinse the quinoa thoroughly under cold water. In a medium saucepan, bring 2 cups of water to a boil, then add the rinsed quinoa. Reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let it cool. While the quinoa is cooking, season the chicken breasts with garlic powder, salt, and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
