Ingredients: 1 cup gluten-free all-purpose flour. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1 tablespoon olive oil. 1/4 cup warm water. 1/4 cup marinara sauce. 1/2 cup shredded mozzarella cheese. 1/4 cup sliced pepperoni or your favorite toppings. 1 tablespoon chopped fresh basil optional.
Instructions: Preheat your oven to 425F 220C. In a bowl, mix the gluten-free all-purpose flour, baking powder, and salt. Add olive oil and warm water to the dry ingredients, and mix until a dough forms. Divide the dough in half and roll each half into a ball. On a lightly floured surface, roll out each dough ball into a circle about 1/4 inch thick. Spread marinara sauce on one half of each dough circle, leaving a small border around the edges. Top the sauce with shredded mozzarella cheese, sliced pepperoni, and chopped fresh basil, if using. Fold the other half of the dough over the toppings to form a half-moon shape. Seal the edges by pressing them together with your fingers or a fork. Place the calzones on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown and crispy. Remove from the oven and let cool for a few minutes before serving.
