These Vegan Healthy Chocolate Pecan Granola Bars are chewy and crunchy at the same time. They taste great with chocolate and a little sweetness from maple syrup. They're simple to make and full of healthy foods that make them a great snack or breakfast on the go.
Ingredients: 2 cups rolled oats. 1/2 cup pecans, chopped. 1/2 cup maple syrup. 1/4 cup almond butter. 1/4 cup cocoa powder. 1/4 teaspoon salt. 1/4 cup dairy-free chocolate chips.
Instructions: Set the oven to 350F 175C and heat it up. Put parchment paper around the edges of an 8x8-inch baking dish. Put rolled oats and chopped pecans in a large bowl and mix them together. Put maple syrup, almond butter, cocoa powder, and salt in a small saucepan and heat it over medium-low heat. Mix everything together and heat it all the way through. Pour the wet mixture over the pecans and oats, and mix them well so that they are all covered. Firmly and evenly press the mixture into the baking dish that has been prepared. On top, sprinkle dairy-free chocolate chips, and then gently press them into the cream. Put it in the oven for 20 to 25 minutes, or until the edges turn golden brown. Take the dish out of the oven and let it cool all the way down in it. After the granola bars have cooled, lift the parchment paper off of the dish and cut them into bars. Keep at room temperature in a container that keeps air out for up to a week.
