The rich chocolate and cool peppermint flavors in these vegan peppermint cookies go so well together. These are great for holiday parties or any time you want a sweet treat!
Ingredients: 1 cup all-purpose flour. 1/2 cup vegan butter, softened. 1/2 cup granulated sugar. 1/4 cup powdered sugar. 1/4 cup cocoa powder. 1 tsp vanilla extract. 1/2 tsp peppermint extract. 1/4 tsp salt. 1/4 cup vegan chocolate chips or chunks. Crushed candy canes for topping.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a bowl, cream together the vegan butter, granulated sugar, and powdered sugar until smooth. Add the vanilla extract and peppermint extract, mix well. Sift in the flour, cocoa powder, and salt. Mix until combined. Fold in the vegan chocolate chips or chunks. Roll the dough into small balls and place them on the prepared baking sheet. Flatten each ball slightly with the palm of your hand. Bake in the preheated oven for 10-12 minutes, or until the edges are set. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Once cooled, sprinkle crushed candy canes over the cookies for a festive touch. Enjoy your vegan peppermint cookies!
