I am cooking again and very happy with the results this time around. I had a number of ideas floating around my head and managed to get them into one recipe. Chicken-fried pickle-brined maitake mushrooms are my very own idea and honestly, if I ever get famous, it is likely to be for this. Pickling them frying the mushrooms leaves them juicy and not overly oily. The would work amazingly well for any number of dishes, but honestly, you can’t go past a burger. The pickle is on top for a number of reasons explained within the recipe, but mainly because, well, the burger didn’t need it inside. Served with kimchi remoulade on a brioche bun, it couldn’t have been better. Try it yourself.
