What a great list of questions! How about some Burned Lady, Cave Coral, Golden Celery, and Springberry for your Watcher?

Spoilers for game one~
(answering for my canon Watcher, a pale elf druid named Faraligh Tzulich she/her.)
Burned Lady: The Godhammer is a very strange concept to Faraligh. She grew up in an environment that worshipped gods and spirits and has a very hard time understanding why an entire group of people would feel so deeply as to kill a god. Even then she has a difficult time trying to wrap her head around the fact that you could even do such a thing.
She and Durance very much nearly came to blows many times over his overt disrespect against Magran, but when it came to the realization that Magran was trying to cover up her mistakes it legitimately angered Faraligh. She spent so long trying to understand why the Godhammer was even created that she felt the goddess behind it should at least carry the responsibility of its actions.
Cave Coral: There was an incredible culture shock when Faraligh came to the Dyrwood. It's my own headcanon that the Pale Elves live a very Proto-Germanic/Icelandic lifestyle (which includes how they worship their gods and how their language sounds). She very much misses her home and tries to make her clan proud by wearing the same style clothing-even if she has to make it herself.
Faraligh also has a difficult time with the language. I imagine she certainly has trouble with the spelling, "Why must it have so many letters?".
Golden Celery: Faraligh's main party consisted of Edér, Aloth, Sagani and Itumaak, Hiravias, and usually either Kana or the Grieving Mother.
As for romances, Obsidian can pry Edér from my cold dead hands. He and Faraligh have a long and complicated relationship that develops further into the next game.
Springberry: Faraligh isn't the same person since the bîaŵac. While she has always remained exceedingly kind and almost motherly in ways, she's much more hardened by the end of the game. Her views of the gods turns very bitter. What was once a deep reverence turns into an almost business-like relationship. She's understood they are great beings of power, but learning their truths has given her a foul taste in her mouth that she carries into the next game for sure.
Being the Watcher and having to take on certain responsibilities to a non-native country has been difficult. The sleepless nights dreaming of impending doom and hearing Thaos in the back of her head sticks with her for quite some time after.
