PINDI CHOLE
Ingredients :
To Boil Together in Chole :
250 gms Chickpeas
4 tsp Tea Powder or 2 Tea Bags
1 tsp Amla Pieces
3 Cloves (Laung)
1/2 tsp Baking Soda
1 Brown Cardamom (Badi Elaichi)
1 ” Cinnamom Stick
1 Bay Leaf (Tej Patta)
3 Green Cardamom (Chotti Elaichi)
1 Star Anise
6 Black Peppecorns
Salt to taste
To make Masala Water :
7-8 Blackpeppercorn
1 " Cinnamon Stick
5-6 Cardamom
Mix all three and crush into powder
1 star Anise
3 cloves
For Gravy :
1 Onion
2 Tomatoes
3-4 tbsp ghee
1 tsp Jeera powder
1 tbsp gingergarlic paste(optional)
1 tbsp Amchur powder
1 tbsp Kasuri methi
1 tbsp Chola masala
Directions:
Soaked Chole overnight. In morning give it a one rinse.
Now take 5 -6 glasses of water in Pressure Cooker add soda & salt.
Now make a small pouch of tea and all the spices. Keep it in Chole. Cover the lid of pressure cooker.
Let it cook for 8 whistles.
Once pressure cooker cools discard Tea pouch.
Now take one cup water add all spices to make masala water.
Once it boils to half keep it aside.
Take a pan add 2 tbsp ghee let it be hot.
Add onion and saute till golden brown.
Add ginger garlic paste saute for 2 min.
Now add Tomatoes and cook till ghee leaves the sides of the pan.
Now add chole.
Add rest of the ingredients along with masala water and cook for few min.
Add ghee & kasuri methi. Mix well.
Switch off the flame. Cover for few min before you serve.
Serve hot with Bhatura, puri, roti , rice.
Note:
Onion Tomatoes gravy is optional.
Ginger Garlic is optional too.
In that case add masala water more according to your preference.
