Ingredients: 2 lbs boneless chicken breast, cut into 1-inch cubes. 1/2 cup pineapple juice. 1/4 cup soy sauce. 1/4 cup brown sugar. 2 cloves garlic, minced. 1 teaspoon ginger, grated. 1 red bell pepper, cut into 1-inch pieces. 1 green bell pepper, cut into 1-inch pieces. 1 red onion, cut into 1-inch pieces. 1 cup pineapple chunks. Wooden skewers, soaked in water for 30 minutes.
Instructions: In a bowl, combine pineapple juice, soy sauce, brown sugar, garlic, and ginger to make the marinade. Place the chicken cubes in a resealable bag or a shallow dish and pour the marinade over them. Seal and refrigerate for at least 30 minutes, or ideally, marinate overnight for maximum flavor.
