Indulge in the flavors of a classic Pineapple Upside-Down Cake with this delightful fudge. It combines the sweetness of pineapple and maraschino cherries with the creaminess of white chocolate for a perfect treat.
Ingredients: 2 cups white chocolate chips. 1 can 14 oz sweetened condensed milk. 1/2 cup unsalted butter. 1/2 cup crushed pineapple drained. 1/2 cup maraschino cherries chopped. 1/2 cup brown sugar. 1 teaspoon vanilla extract. 1/4 teaspoon salt. Yellow food coloring optional.
Instructions: Put parchment paper around the edges of an 8x8-inch baking pan, leaving two sides overhanging to make it easy to take off. Put white chocolate chips, sweetened condensed milk, and butter in a bowl that can go in the microwave. Stir the mixture every 30 seconds while heating it in the microwave until it is smooth and well mixed. Add the crushed maraschino cherries, brown sugar, vanilla extract, and salt, and mix them in well. If you want the color of cake, you can add yellow food coloring. Spread the fudge mixture out evenly in the pan that has been prepared. Put it in the fridge for at least two hours, or until it gets firm. When the fudge is set, use the extra parchment paper to lift it out of the pan. Cut it up into rectangles or squares, and then serve it. Have fun!
