Ingredients: 1 bunch of broccolini. 8 slices of prosciutto. 2 tablespoons olive oil. 1 teaspoon garlic powder. Salt and pepper to taste. 1 lemon, sliced for garnish.
Instructions: Preheat your oven to 400F 200C. Trim the tough ends of the broccolini and blanch them in boiling water for 2 minutes. Drain and set aside. Lay out the slices of prosciutto on a clean surface. Divide the blanched broccolini into 8 equal portions. Place one portion of broccolini at the end of a slice of prosciutto and roll it up, wrapping the prosciutto around the broccolini. Repeat with the remaining broccolini and prosciutto slices. Place the broccolini bundles on a baking sheet lined with parchment paper. Drizzle olive oil over the bundles and sprinkle with garlic powder, salt, and pepper. Bake in the preheated oven for 15-20 minutes, or until the prosciutto becomes crispy and the broccolini is tender. Serve hot, garnished with lemon slices for added flavor.
