Tonight we had creamy chicken enchiladas! I made it from a recipe I found on Pinterest, because I have never made enchiladas before. It came out great. Timmy was especially happy that he got a place at the table to try them (no,not really, he was just in my seat). I will say that I prefer my enchiladas a bit more on the wet side and would double up on the sour cream and sauce. But this would be a great dinner night item. You could probably “meal prep” this item so all you have to do is stick it in the oven at 350F for 20 minutes. Viola! Dinner!
