Ingredients: 1 cup rolled oats. 1 cup all-purpose flour. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/2 cup packed brown sugar. 1 large egg. 1 teaspoon vanilla extract.
Instructions: Preheat your oven to 350F 175C. Line a baking sheet with parchment paper or silicone baking mat. In a medium mixing bowl, whisk together the rolled oats, all-purpose flour, baking soda, and salt. In a separate large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and creamy. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Drop spoonfuls of dough about 1 tablespoon each onto the prepared baking sheet, spacing them about 2 inches apart. Using the back of a fork, gently press down on each cookie to slightly flatten it. Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden. Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.
