In this Plant-Based BLAT, toasted whole grain bread is layered with creamy avocado, juicy tomatoes, crispy vegan bacon, and fresh lettuce. It's a tasty vegan take on the classic BLT sandwich.
Ingredients: 1 ripe avocado, mashed. 4 slices of whole grain bread, toasted. 1 cup of cherry tomatoes, sliced. 1 cup of lettuce leaves. 1/2 cup of vegan bacon tempeh or coconut bacon. 1 tablespoon of vegan mayonnaise. 1 tablespoon of Dijon mustard. Salt and pepper to taste.
Instructions: Each piece of toasted bread should have the same amount of mashed avocado on it. Put lettuce leaves on top of the mashed avocado. Put slices of tomato on top of the lettuce. Follow the directions on the package to cook vegan bacon until it's crispy. Put vegan bacon that is crispy on top of the tomato layer. Add Dijon mustard to the vegan mayonnaise and spread it on the rest of the toasted bread slices. Add pepper and salt to taste. Put the sandwiches together by putting slices of the mayo-mustard spread on top of the bacon layer to make sandwiches. Cut each sandwich in half across the middle, and serve right away.
