This Easy Vegan Samosa Pie is a delightful twist on traditional samosas. It features a flavorful filling of potatoes, peas, and chickpeas spiced with aromatic Indian spices, all encased in flaky vegan puff pastry. It's perfect for a cozy dinner or as a party appetizer.
Ingredients: 1 tbsp olive oil. 1 onion, diced. 2 cloves garlic, minced. 1 tsp ginger, minced. 2 medium potatoes, peeled and diced. 1 cup frozen peas. 1 cup canned chickpeas, drained and rinsed. 1 tsp ground cumin. 1 tsp ground coriander. 1/2 tsp turmeric powder. Salt and pepper to taste. 1 package vegan puff pastry. 1 tbsp non-dairy milk.
Instructions: Preheat the oven to 375F 190C. Heat olive oil in a large skillet over medium heat. Add diced onions and cook until translucent. Add minced garlic and ginger to the skillet, saut for 1-2 minutes. Add diced potatoes, frozen peas, and chickpeas to the skillet. Cook until the potatoes are tender, stirring occasionally. Stir in ground cumin, ground coriander, turmeric powder, salt, and pepper. Cook for another 2-3 minutes. Roll out the puff pastry and line a pie dish with it. Trim off any excess pastry. Pour the filling mixture into the pie dish, spreading it evenly. Cover the pie with another layer of puff pastry, sealing the edges by crimping them with a fork. Brush the top of the pie with non-dairy milk. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crisp. Allow the pie to cool slightly before slicing and serving.
