Okay everyone I have a theory of why Karl Heisenberg might have grey hair. Small spoilers up ahead if you didn't read wikipedia about him yet.

So in Karls Biography this is written:

"Heisenberg was one of the children who was kidnapped and subjected to the Cadou parasite experiments by Mother Miranda, who brainwashed him into being her servant."

He was a child and exposed to a lot of pain and stress of being experimented by 'Mother' Miranda. I think that this stress could caused his hair to turn gray in early age.

I founded this article here that counducted an experiment and one of the lines that caught my attention was this:

“When we started to study this, I expected that stress was bad for the body — but the detrimental impact of stress that we discovered was beyond what I imagined,” Hsu says. “After just a few days, all of the melanocyte stem cells were lost. Once they’re gone, you can’t regenerate pigments anymore. The damage is permanent.”

That's why Karl has gray hair and looks a but older with his gray hair.
