Shifu always finds alcohol harmful to both mind and to body. That's why he forbidded alcohol to his students in the first place. But he uses it so and so rarely to relieve extra stress from being a grandmaster. He never drinks much enough to be a drunk and he does it secretly from his students so they do not develop a harmful habit in a young age.

Shifu sometimes silently cries while meditating at the statue of Oogway. He remembers all the memories that they shared and miss him dearly. He does not want his students to see this,so he usually meditates there after they are all asleep.
Shifu: who gave you that staff?
Po: Oh, Oogway!!!
Shifu: of course he did...
Po: Oh and I mastered Chi!
