Ingredients: 4 large potatoes, thinly sliced into coins. 2 tablespoons butter. 2 tablespoons olive oil. 2 cloves garlic, minced. 1/4 cup brown sugar. 1/4 cup heavy cream. Salt and pepper to taste. Fresh parsley for garnish optional.
Instructions: In a large skillet, heat the butter and olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Add the potato coins to the skillet in a single layer. Cook until golden brown and caramelized, about 5-7 minutes per side. Sprinkle the brown sugar over the potatoes and stir gently until the sugar has melted and coated the potatoes. Pour in the heavy cream and stir until well combined. Cook for an additional 2-3 minutes until the sauce has thickened. Season with salt and pepper to taste. Garnish with fresh parsley if desired before serving.
