Ingredients: 6 potatoes, washed and diced. 4 cloves garlic, minced. 2 tablespoons olive oil. 1 teaspoon salt. 1/2 teaspoon black pepper. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. 1 tablespoon chopped fresh parsley.
Instructions: Preheat oven to 400F 200C. In a large bowl, toss diced potatoes with minced garlic, olive oil, salt, black pepper, dried thyme, and dried rosemary until evenly coated. Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and crispy on the edges, stirring halfway through. Remove from the oven and sprinkle with chopped fresh parsley before serving.
