Potato Mac Salad has both the heartiness of potatoes and the comfort of macaroni pasta. It is mixed in a creamy dressing that has a tangy vinegar and sweet pickle relish twist to it.
Ingredients: 3 large potatoes, peeled and diced. 1 cup macaroni pasta. 1/2 cup mayonnaise. 2 tablespoons vinegar. 1/4 cup sweet pickle relish. 1/4 cup chopped onion. 1/4 cup chopped celery. Salt and pepper to taste.
Instructions: Boil potatoes in salted water until tender, about 10-12 minutes. Drain and let cool. Cook macaroni according to package instructions until al dente. Drain and rinse under cold water. In a large bowl, combine mayonnaise, vinegar, sweet pickle relish, onion, and celery. Mix well. Add cooled potatoes and macaroni to the bowl. Stir gently to coat with the dressing. Season with salt and pepper to taste. Refrigerate for at least 1 hour before serving.
