You will love having these Easter cupcakes at your holiday party. They are great for decorating an Easter cake because they are easy to make and come in pretty pastel colors.
Ingredients: 1 box of vanilla cake mix. 3 large eggs. 1/2 cup vegetable oil. 1 cup buttermilk. 1 tsp vanilla extract. Pink, blue, and yellow food coloring. 1 cup unsalted butter, softened. 4 cups powdered sugar. 2-3 tbsp milk. Assorted Easter-themed decorations mini chocolate eggs, sprinkles, edible flowers. Cupcake liners.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. Put the eggs, vegetable oil, buttermilk, vanilla extract, and vanilla cake mix in a large bowl. Mix until it's smooth. Put the batter into three bowls that are all the same size. Put a few drops of pink food coloring in one bowl, blue in another, and yellow in the last. Mix until you get the pastel colors you want. To make a layered look, put a spoonful of each color of batter into a different cupcake liner. Bake in an oven that has already been heated for 18 to 20 minutes, or until a toothpick stuck in the middle of a cupcake comes out clean. Get the frosting ready while the cupcakes cool down. Put the softened butter in a bowl and beat it until it's smooth. One cup of powdered sugar at a time should be added, along with a tablespoon of milk every so often, until the mixture is smooth and fluffy. To make the frosting look like the cake batter, divide it into three bowls and color each one with the same color. After the cupcakes have cooled, use a piping bag and your favorite decorating tip to cover each one with a different color of frosting. Add different Easter-themed decorations to the cupcakes, such as mini chocolate eggs, sprinkles, and edible flowers. Give your cute Easter cupcakes to people and enjoy them!
