Healthy and protein-packed nuggets made with chickpeas, quinoa, and veggies, baked to crispy perfection.
Ingredients: 1 can chickpeas, drained and rinsed. 1 cup cooked quinoa. 1 cup mixed vegetables peas, corn, carrots, finely chopped. 1/4 cup breadcrumbs. 1 tsp garlic powder. 1 tsp onion powder. Salt and pepper to taste. 2 tbsp olive oil.
Instructions: Preheat oven to 375F 190C and line a baking sheet with parchment paper. In a large bowl, mash chickpeas until slightly chunky. Add cooked quinoa, mixed vegetables, breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix until well combined. Shape mixture into small nuggets and place them on the prepared baking sheet. Brush the nuggets with olive oil and bake for 20-25 minutes, or until golden brown and crispy. Serve with ketchup or your favorite dipping sauce.
