Chicken, Provolone & Spinach
Hello and welcome back to another great recipe from the Spice Rack!! We do apologize in advance as it has been awhile since we have last updated the cookbook. (We both have been dealing with opposite work schedules and general life, which causes both Thyme and I to not see each other as much.) But wait no longer~we have some delicious foods for you!!!!
NOW! Onto the recipe!!
My recipe that I chose was called Chicken, Provolone, & Spinach Butterflies. (This is not my original recipe-I do not own this) I am a huge fan of all of those ingredients and I absolutely enjoyed everything about this recipe! The prep time was so quick-like 20 minutes quick- and the total time with prepping and baking time was 40 minutes.
Ingredients:
-Boneless Chicken Breast
- Spinach (make sure to shred)
-Provolone
-olive oil
-minced garlic
***Preheat oven to 425*F
-To start, I took 2 boneless chicken breasts and sauted them in 2 TBS of olive oil Saute for 5 minutes until outside of chicken is cooked.
-Next, take spinach and saute with 1 tsp of garlic until spinach is wilted.Removed and set aside.
-slice the chicken breast in half (think of cutting a bagel)...this is known as a butterfly. Make sure to not make the pieces too thin.
-place spinach and garlic mix on bottom piece of chicken and add 1/2 slice of provolone cheese. Top with other half of chicken and place the other half of provolone on top.(it should look like a chicken breast sandwich)
-place in oven and bake for 20 minutes.
Serve with vegetables of your choice...(I used steamed asparagus with red onion)
This recipe was so good, it had my taste buds dancing!!! And honestly, you don’t have to feel guilt eating it either, which is another favorite! Hope you all enjoy it and always remember to stay hungry!!!
