Tonight I was inspired to play switchup with another Publix Aprons recipe. I made a plant-based version of their Thai Beef with Carrot Basil Salad. The main things that needed to be veganized was the beef,obviously, and the clam juice. You can use any meat sub of your choice and for the clam juice I just used vegetable stock. I cooked and seasoned the beef extra to taste and I t came out great. My hubby definitely went back for more after his first plate. This one is a keeper. This is my veg-friendly version of a Publix’s apron’s meal. Tonight I made Kung Pao meatless chicken over spaghetti squash. I did cook and season the chicken separately before adding it to the sauce mixture. I also seasoned the spaghetti squash well before cooking it. I think I need a cigar after eating this. Made a meatless southwestern taco salad using the Beyond Burger (seasoned with taco seasoning, salt, pepper, garlic powder, lime juice and other seasonings to taste. The beefless mix also included chopped spinach, black beans, salsa, onions and tomatoes. I then poured the mix over lettuce and added tortilla chips, cilantro, non-dairy cheese shreds and Non-dairy sour cream. This was inspired by a recipe I saw in Publix last week and I had to come home and switch it up “veg” style. If you’re not a fan of the Beyond burger then you can certainly use 12-16 oz of your favorite meat substitute. Dinnertime!!!!! Tonight I made a plant-based version of the Caribbean beef lettuce wraps inspired by a Publix Aprons recipe. I used the Beyond meat crumbles for the ground beef and seasoned to taste outside of the jerk seasoning. The lemon vinaigrette really brought the broccoli slaw with the mangoes together with tons of flavor. It’s real pleasing to the palate and won’t weigh you down.
