Ingredients: 1 1/2 cups pumpkin puree. 1/4 cup brown sugar. 1 package 2 1/4 tsp active dry yeast. 1/4 cup warm water 110F. 4 cups all-purpose flour. 1 tsp salt. 1/2 tsp cinnamon. 1/4 tsp nutmeg. 1/4 tsp cloves. 1/4 tsp allspice. 1/4 tsp ginger. 1 egg. 1 tbsp vegetable oil. For the Whipped Pumpkin Cream Cheese:. 8 oz cream cheese, softened. 1/2 cup pumpkin puree. 1/4 cup powdered sugar. 1/2 tsp vanilla extract. For the Lemon Sugar Topping:. 1/4 cup granulated sugar. 1 tsp lemon zest.
Instructions: Warm water and brown sugar should be mixed in a small bowl. Add the yeast and let it sit for 5 minutes until it starts to foam. Put the flour, salt, and spices in a large bowl and mix them together. Mix the yeast with the egg, vegetable oil, and pumpkin puree. Then, add these to the dry ingredients. Mix until you get a dough. On a floured surface, work the dough for five minutes or until it is smooth. Cover it and put it in a greased bowl. Let it rise for an hour, or until it doubles in size. Set your oven to 375F 190C and add 2 tablespoons of brown sugar to a large pot of water. Bring the water to a boil. Cut the dough into 12 equal pieces, and use your hands to shape each one into a bagel. First, boil each bagel for one to two minutes on each side. Then, put them on a baking sheet that has been lined with parchment paper. Place the bagels in the oven and bake for twenty to twenty-five minutes, or until they turn golden brown.
