Ingredients: 1 3/4 cups all-purpose flour. 1 1/2 teaspoons baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/4 teaspoon ground cloves. 1/4 teaspoon ground ginger. 1/2 cup granulated sugar. 1/2 cup brown sugar. 1/2 cup canned pumpkin puree. 1/3 cup vegetable oil. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup buttermilk. For the glaze:. 1 cup powdered sugar. 2 tablespoons milk. 1/2 teaspoon vanilla extract. 1/4 teaspoon ground cinnamon. Pinch of salt. 1/4 cup chopped pecans optional, for topping.
Instructions: Preheat your oven to 350F 175C. Grease a donut pan and set it aside. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, salt, and all the spices cinnamon, nutmeg, cloves, and ginger. In a separate large bowl, combine the granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract. Mix until well combined. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix. Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full. Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into a donut comes out clean. While the donuts are baking, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, vanilla extract, ground cinnamon, and a pinch of salt until smooth. Once the donuts are done, remove them from the oven and let them cool in the pan for a few minutes. Then, transfer them to a wire rack to cool completely.
