One of my classmates got the privilege to punch the dough after it sat in the hot box for 15 minutes, allowing it to rise. Chef said that it was important to get the air out of the dough and then to fold all of it on top of itself. We then flipped the dough and placed it back in the hot box to rise again.
As this class comes to an end, which we learned next week will the our last week, I am realizing how much I love cooking and being in the kitchen. I always thought I wanted to go into the hotel side of hospitality, but now that I have been through this class I am unsure. Hopefully, I’ll figure it out soon!
