Dug up a row of beets I had left over winter in the garden yesterday to plant some chard in their place. Cooked some up (instapot is the best for cooking whole beets!) and they were fantastic! So awesome to have fresh beets again! I've got about 2.5 gallons (half a Home depot bucket) left. Hoping I have another row out there hiding to tide us over until this seasons first crop is ready.
