from experience the ring finger is the best to lose and also apparently the easiest to reattach in which case it looks crooked and weird forever but you can do tricks with it and gross out everyone

I know someone who lost some of their fingers. If you can't reattach, and you're concerned about losing strength, I'd say pointer or pinkie. Apparently the force created between the thumb and the pointer is less than a middle or ring finger. (so unfortunately, If you character needs to keep some strength, I'd suggest not cutting those two, no matter how funny)
