today's dinner: bread roll with mascarpone and tomato sauce, sautéed mushrooms and onion and mozzarella done in airfryer. wet foods make me want to kill people in the summer so will probably be eating many more airfryer breads in the foreseeable future. very good. could have put more mozzarella
today's dinner: bread roll with butter + parsley, strawberry tomatoes and mozzarella baked a litte in the air fryer. delicious. all i ate today was the ghost of a soup and a mini ice cream because i've had the worst headache ever and this hit the spot
today's dinner: spinach and buffalo milk ricotta ravioli with red pesto. very yummy. my mistake was leaving the ravioli uncovered in the fridge for a few days so they got really dry, and they were a little undercooked when i ate them because i was too lazy to wait longer
today's dinner: spinach and ricotta tortellini with a drizzle of olive oil and a little black pepper. i promise i don't eat this much stuffed pasta usually. this is a different brand than i usually buy and they were good but the filling was very cheesy which makes me think ricotta was not the only cheese in there. i'll try to reduce my filled pasta intake
today's dinner: mushroom and truffle mezzelune from the freezer with a drizzle of olive oil and a little black pepper. believe it or not i didn't freeze these either. i remember when i had the other half of this pack i guess i really really undercooked them cause they tasted terrible, hence why the rest of them were banished to the freezer. but they're yummy. it was really my fault. the filling is nice and savoury so you don't need to salt them (other than the water when cooking). i would just prefer them in a more convenient shape, cause i feel like the weight inequality of a semi circle causes the eating of them via fork to be very inefficient. every time i cook a ready filled pasta like this one of them always explodes and spills filling onto all the others
today's dinner: defrosted spinach, ricotta and pine nut girasoli with a drizzle of olive oil. i wanted the rice i made the other day but someone else ate it, so i was really disappointed. the girasoli were good; i like these specific ones because they have a lemony zest to them that most ricotta-stuffed pasta doesn't have. i don't know who froze them or when but it wasn't me. yummy
