IN ROME, RED SAUCE IS RICH, HEARTY AND… BARELY THERE?
Be sure to purchase thinly sliced pancetta and chop it finely to ensure the pieces crisp with cooking. If the sauced pasta thickens before you can serve it, toss in a bit more reserved cooking water to loosen its consistency.

The answer to making a lazy pasta dish...
Been addicted to making this 'cos it's just SO easy and you can add just about anything to it. Works with any leftover pasta. Here's a simple recipe for it..as if you couldn't figure out how to make it by looking at the picture. lol. No exact measurements though since this is purely a DIY thing.
Ingredients (for this particular fry up in the picture): Cooked pasta (hot or cold, it doesn't matter) Broccoli, cut in to bite-sized pieces Diced tomatoes Sliced smokie sausages Diced onions Minced garlic 1/4 cup water (or more) Olive Oil 1 tsp Sesame Oil (this I added to add a bit of an Asian twist to it) Salt & pepper to taste
Method: 1. Heat up the olive oil in a non-stick frying pan on medium-high. (Non-stick is best since the pasta will want to stick to other cookware)
2. Fry the sausages until both sides brown a bit, turn the heat down to medium, then add in the onions and garlic.
3. Add the pasta and broccoli once the onions start to become translucent. Add the 1/4 water, stir, and cover for about 5 minutes.
4. Uncover, stir, add the tomatoes. Add a little more water if the broccoli is not cooked through yet and cover for another 5 or 6 minutes.
5. Uncover, stir, and mix in salt and pepper. Add sesame oil. Cool for 2 minutes, stirring occasionally.
That does look like a lot of steps after I just wrote that out. But once you actually make it, you'll find that it really is quite simple. Most times, it only takes about 10 minutes to put the whole thing together. It's even faster if you use spinach or cabbage since broccoli is a harder vegetable and takes longer to cook.
Best served with some green tea and lemon. ;)
