Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/2 cup brown sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp ground cloves. 1 cup canned pumpkin puree. 1/3 cup vegetable oil. 2 large eggs. 1 tsp vanilla extract. 4 oz cream cheese, softened. 1/4 cup granulated sugar. 1/2 tsp vanilla extract. 1 egg yolk.
Instructions: Warm your oven up to 350 F 175C and put paper liners in a muffin tin. Mix the flour, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves in a medium-sized bowl with a whisk. The pumpkin puree, vegetable oil, two eggs, and one teaspoon of vanilla extract should all be mixed together in a different bowl. Mix the wet and dry ingredients together until they are just mixed. Beat the cream cheese in a different bowl until it's smooth. After that, put in 1 egg yolk, 1/4 cup of granulated sugar, and 1/2 teaspoon of vanilla extract. Mix everything together well. To make muffins, put about two thirds of the pumpkin batter into each cup. Place a small amount of the cream cheese mix on top of the pumpkin batter in each cup. To make a marbled look, use a toothpick or skewer to swirl the cream cheese mixture into the pumpkin batter. After the oven is hot, bake the muffins for 18 to 20 minutes, or until a toothpick inserted into the middle comes out clean. For a few minutes, let the muffins cool in the pan.
