This Better-Than-Takeout Chicken Fried Rice recipe is a delicious and satisfying meal that you can easily make at home. It's packed with flavor from tender chicken, fluffy rice, colorful vegetables, and savory soy sauce.
Ingredients: 2 cups cooked rice. 2 chicken breasts, diced. 2 eggs, beaten. 1 cup mixed vegetables carrots, peas, corn. 3 tablespoons soy sauce. 2 cloves garlic, minced. 2 tablespoons vegetable oil. Salt and pepper to taste. Green onions for garnish.
Instructions: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add diced chicken to the skillet and cook until no longer pink, about 5-7 minutes. Remove from skillet and set aside. In the same skillet, add another tablespoon of oil. Add minced garlic and mixed vegetables. Cook until vegetables are tender, about 3-4 minutes. Push vegetables to one side of the skillet and pour beaten eggs onto the empty side. Scramble the eggs until cooked through. Add cooked rice and soy sauce to the skillet. Stir to combine with the vegetables and eggs. Return cooked chicken to the skillet. Mix everything together and cook for another 2-3 minutes. Season with salt and pepper to taste. Garnish with chopped green onions before serving.
