These vegan and gluten-free green chili veggie burgers are packed with flavor and protein. They're perfect for a quick and healthy weeknight meal.
Ingredients: 1 can 15 oz black beans, drained and rinsed. 1/2 cup cooked quinoa. 1/2 cup green chili, chopped. 1/4 cup red onion, finely chopped. 1/4 cup cornmeal. 1/4 cup cilantro, chopped. 1 teaspoon cumin. 1/2 teaspoon smoked paprika. Salt and pepper, to taste. 1 tablespoon olive oil.
Instructions: Preheat oven to 375F 190C. In a large bowl, mash the black beans with a fork or potato masher. Add the quinoa, green chili, red onion, cornmeal, cilantro, cumin, smoked paprika, salt, and pepper. Mix until well combined. Divide the mixture into 4 equal portions and shape into patties. Heat olive oil in a skillet over medium heat. Cook the patties for 3-4 minutes per side, or until golden brown. Transfer the patties to a baking sheet lined with parchment paper. Bake for 10-12 minutes, or until heated through. Serve the veggie burgers on buns with your favorite toppings.
