Ingredients: 1 cup cooked quinoa. 1 cup black beans, drained and rinsed. 1 cup corn kernels fresh, frozen, or canned. 1 cup cherry tomatoes, quartered. 1/2 cup red onion, finely chopped. 1/4 cup cilantro, chopped. 1/4 cup red bell pepper, diced. 1/4 cup green bell pepper, diced. 1/4 cup avocado, diced. 1/4 cup lime juice. 2 tablespoons olive oil. 1 teaspoon cumin. 1/2 teaspoon chili powder. Salt and pepper to taste. 8 small lettuce leaves e.g., Bibb or Romaine.
Instructions: Cook the quinoa and put it in a large bowl. Add the corn, black beans, cherry tomatoes, red onion, cilantro, red and green bell peppers, and avocado. To make the dressing, mix the cumin, chili powder, salt, pepper, lime juice, and olive oil in a separate small bowl. Add the dressing to the quinoa mixture and mix it all together, making sure that everything is covered evenly.
