Chicken satay
I am slowly trying to introduce my toddler to more adult flavours so that we can enjoy more family meals together. This week I decide to try a mild chicken satay.
I modified this recipe (http://www.quirkycooking.com.au/…/chicken-and-cashews-with…/) to make it more toddler friendly - my modifications included: - I only marinated the chicken for 15 mins - I omitted the red chilli and coriander from the satay sauce - I elected to keep the veggies simple and only steamed pumpkin and broccoli - We didn’t have any rice so I used quinoa
The quinoa was delicious and Mr 2.5 proclaimed “this rice tastes like apples”. It tasted like coconut but whatever - he ate it so I didn’t really care what he thought it tasted like.
He also loved the chicken. I didn’t cook the chicken in the varoma but instead got my husband to quickly cook it in our wok. I’m sure it would have worked either way but I am still learning to use the steaming function on my thermie so didn’t want to try chicken in the varoma for the first time when I needed to get dinner on the table ASAP.
I served the satay sauce on the side for our toddler and poured it on the adult meals. Mr 2.5 tried the sauce but it wasn’t a huge hit. This is a nice easy meal and good for adults who want a yummy chicken satay in under 30 mins. Overtime I think Mr 2.5 will come to enjoy this meal so I am going to keep it on the meal planning rotation.
If you don’t have a thermie you could easily make the sauce by cooking it on the stove on a low heat for 30 mins and then blitzing with a stick mixer. Steam the veggies and cook the chicken as you like while the sauce is cooking. Use a packet rice for a super fast dinner.
