Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp salt. 1/2 cup milk. 2 large eggs. 2 tbsp unsalted butter, melted. 1 tsp vanilla extract. 1/2 cup raspberry jam. 1/4 cup powdered sugar for dusting. Oil for frying.
Instructions: In a mixing bowl, whisk together flour, granulated sugar, baking powder, and salt. Add milk, eggs, melted butter, and vanilla extract. Mix until smooth. Heat oil in a deep frying pan to 350F 175C. Using a piping bag or a zip-top bag with the corner cut, pipe the doughnut batter into the hot oil in a circular shape. Cook until golden brown, turning once, about 2-3 minutes per side. Remove doughnuts from the oil and drain on a paper towel-lined plate. Fill a piping bag with raspberry jam and insert the tip into each doughnut, squeezing a bit of jam inside to create a ripple effect. Dust the doughnuts with powdered sugar. Serve warm and enjoy!
