A traditional Tamil New Year treat, Mango Pachidi is made from raw mangoes and jaggery. This sauce is just the right amount of sour and sweet, making it a great addition to holiday meals.
Ingredients: 2 raw mangoes peeled and grated. 1 cup jaggery grated. 1/2 tsp mustard seeds. 1/4 tsp turmeric powder. 2-3 dry red chilies. A pinch of asafoetida hing. Salt to taste. 2 tbsp oil. A few curry leaves.
Instructions: Put mustard seeds in a pan with hot oil and let them pop. Some dry red chilies, curry leaves, and asafoetida should be added. Just saut for a short time. Place the grated mangoes in the pan and cook them until they get soft. To that, add salt and turmeric powder. Combine well. Gadiya should be added and cooked until it melts and mixes with the mangoes. Simmer the mixture until it gets as thick as you want it to be. Take it off the heat and let it cool down. Cut up and serve cold as a relish.
