Ingredients: 2 cups raw almonds. 1/2 cup raw honey or maple syrup. 1 tsp almond extract. 1/2 tsp vanilla extract. Pinch of sea salt. 1/4 cup unsweetened shredded coconut optional, for coating. 1/4 cup crushed pistachios optional, for garnish.
Instructions: In a food processor, pulse the raw almonds until finely ground almond flour is formed. To the almond flour in the food processor, add the raw honey or maple syrup, almond extract, vanilla extract, and a small pinch of sea salt. Mix until a sticky dough comes together. Form tiny portions of the marzipan dough into the shapes you want, or into bite-sized balls. You can add another layer of taste and texture to the marzipan balls by rolling them in unsweetened shredded coconut, if you'd like. To firm up, place the marzipan delights in the refrigerator for approximately half an hour. If desired, sprinkle crushed pistachios over the treats.
