Although we are a vegetarian family and eat extremely healthy I wanted to go one day a week where we eat completely raw! We eat a 75% raw diet most of the time but I want to up the raw intake even more. This is our 1st Raw Wednesday and here is our menu:
4-5 Tablespoons of Chia seeds
1 to 1/2 cups almond milk
1/2 cup whole rolled oats
1 cup blueberries (or other fruit of choice)
1/2 cup walnuts (or other nut of choice)
Mix the chia seeds, cinnamon, vanilla and almond milk together. Stir in blueberries and leave mixture in refrigerator over night. It should become a thick texture by morning. Layer the chia mixture with oats and nuts and top off with some fresh berries and banana. Mmmm a raw, fancy and delicious breakfast.
Ingredients: yields 7 cups
2 medium tomatoes, rough chopped
1/2 cup sun-dried tomatoes, rehydrated in 2 cups water
1 Tbsp raw agave nectar or honey
1 tsp fresh cracked black pepper
1 cup raw walnuts or sunflower seeds, soaked
2 cups diced fresh portabello mushroom, gills removed, 1 large mushroom
2/3 cup diced yellow bell pepper, about 1 pepper
2/3 cup diced onion, about 1/2 medium onion
1 cup organic corn kernels
Rehydrate the sun-dried tomatoes in 2 cups of warm water while you get all of the other ingredients ready. This step is to just soften them. After soaking, remove the tomatoes from the water but keep the soak water. Set the water aside for now.
In a food processor pulse together Sauce ingredients.
Add the Spices. Pulse together.
Add the Veggies. Pulse just a few times. Add the sun-dried tomato soak water, as little or as much of it as you like. I used all of it.
Serve at room temperature or warm in the dehydrator, setting the temp at 145 degrees (F) for 30 minutes or until warm. You can also heat it on the stove in a small sauce pan to finger dipping temp.
Store leftovers in the fridge for 3-4 days.
