JAPANESE POTATO SALAD
Spaghetti Squash with some tomatoes and onions.
I found this recipe at my local super market and thought I'd share it for those who also love veggies.
Ingredients
One 2 lb spaghetti squash
On large or two medium tomatoes. Go green if you're feeling fancy
1/3 cup chopped sweet onion
1/4 cup of olive oil. Extra virgin if you're feeling fancy
Steps
Preheat oven to 375° Cut the squash in half lengthwise and scoop out the seeds to discard.
Brush a baking pan or dish lightly with some of the oil and place the halves cut side down on the pan. Bake for 30 minutes or until you can stab it easily with a fork.
Set the halves down on a plate or similar surface to cool enough to touch.
Chop up the onion and tomato and mix with remaining oil. Add seasoning to your liking.
Scrape the inside of the squash with a fork to make your spaghetti and put the product on a plate or in a bowl.
Dump the tomato onion stuff on it and chow down!!
