Organic milk chocolates chunk almond biscotti

Biscotti are one of my favourite cookies to make, first off, they are so easy to make and they also taste delicious! Biscotti actually means twice cooked, which is what you will do to make these cookies! But trust me it’s well worth it! I hope you like the recipe! If you try them, let me know how they turn out! Ingredients: (I use all organic ingredients)
1/2 cup of butter (melted and cooled)
3/4 cup of raw sugar
2 eggs
2 cups of flour
1 tsp of baking powder
1 vanilla bean
1 tsp of almond extract
1 organic milk chocolate bar
1 cup of chopped/shaved almonds
Orange Zest from 1 small orange
Instructions:
In a stand mixer using a paddle attachment, cream butter and sugar together until smooth. Cut the vanilla bean length wise to split open, and using a small knife, scrape the beans and add to the butter and sugar along with the almond extract and orange zest. Set the mixer to low speed and add 1 egg at a time until mixed.
In a separate bowl, mix the flour and baking powder and then add to the wet mixture and beat on low spread until flour is mixed in then set to medium and mix for 1-2 min.
Take the chocolate bar and smash it with a tenderizer or the back of knife handle works too until you get small chunks. Chop or slice the almonds and add both to the mixer.
The dough should not be too sticky. Separate the mixture in two. On a floured surface, form two long biscotti tubes and add onto a baking sheet (lined with parchment paper), flatten the biscotti with your hands slightly.
Put into preheated oven set at 350 degrees F, and bake for 25-30 min or until the sides start to brown, remove, and let cool for apx 5 minutes so they are easy to handle, but still warm.
Place one tube on a cutting board, cut up in slices, then place back onto the sheet, and put back into the oven and bake for another 7 mins. Remove from oven and let cool.
Makes 24 biscotti
