Imagine my delight when I slices into this?! I didn't know before, but after looking it up, this is called "red stain" in a boxelder tree. It seems the boxelder produces this in response to being wounded, whether by insect, frost, cut, etc. Very interesting and pretty amazing. Anyone know more you can share with me?
