Ingredients: 1 cup unsalted butter, softened. 1/2 cup powdered sugar. 1 tsp vanilla extract. 2 cups all-purpose flour. 2 tbsp cocoa powder. 1 tbsp red food coloring. 1/4 tsp salt. 1/2 cup white chocolate chips.
Instructions: In a large bowl, cream together the softened butter and powdered sugar until light and fluffy. Add the vanilla extract and red food coloring, and mix until well combined. In a separate bowl, whisk together the all-purpose flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Fold in the white chocolate chips. Form the dough into a log shape, wrap it in plastic wrap, and refrigerate for at least 1 hour. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Slice the chilled dough into 1/4-inch thick rounds and place them on the prepared baking sheet. Bake for about 12-15 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Optional: Melt additional white chocolate and drizzle it over the cooled cookies for decoration. Once the chocolate is set, the Red Velvet Shortbread Cookies are ready to be enjoyed!
