Something to satisfy all the shippers (be it male or female, gay or straight) something that lets you experience the adventures, something that lets you puzzle through spells and mysteries. Something that lets you fly a dragon. And definitely something with character growth.

I'm sure Ruby had to end up with Mulan and not Dorothy. Episode 9x05 was made to explain the meeting of Ruby & Mulan for the couple to take place later. Doing an episode without Emma, Regina, Snow White, Charming, Gold, Belle, Henry, and Hook is that the episode was important in character development. Also, the witch was attacked by Zelena, but she leaves her house without a protective spell? And oddly, there was a potion that could help Ruby back into human form. The witch fulfilled Ruby's request. Plus, Mulan didn't try to hit the wolf, and didn't even show fear, she accepted Ruby as she was. As for Merida, she behaves more like a best friend with Mulan than a love interest.
