Anarsha, also known as Anarsa, is a traditional sweet dish from the Indian subcontinent, especially popular in the states of Maharashtra and Bihar. It is made from soaked rice, jaggery or sugar. To make Anarsa, rice is soaked and the water is changed regularly for a few days. Then, flour is prepared by drying the rice, grinding it, and mixing it with jaggery. The dough is covered and left to ripen for 4–5 days. The dough is then wrapped in white poppy seeds, pressed into a round shape and fried until golden.
