Ghavan, also known as instant rice dosa, is a popular Maharashtrian dish that can be prepared quickly. It's crispy, flavorful, and perfect for breakfast or as a snack.
Ingredients: 1 cup rice flour. 2 tablespoons besan gram flour. 1/4 cup finely chopped onions. 2-3 finely chopped green chilies. 1/4 cup finely chopped fresh coriander leaves. 1/2 teaspoon cumin seeds. A pinch of asafoetida hing. Salt to taste. Water as needed. Oil for cooking.
Instructions: In a mixing bowl, combine rice flour and besan. Add finely chopped onions, green chilies, coriander leaves, cumin seeds, asafoetida, and salt to the bowl. Gradually add water and mix well to form a smooth batter. The consistency should be similar to that of regular dosa batter. Heat a non-stick skillet or dosa pan over medium heat. Grease it lightly with oil. Pour a ladleful of the batter onto the center of the pan and spread it in a circular motion to form a thin dosa. Drizzle a few drops of oil around the edges of the dosa and cook until it turns golden brown and crispy on the bottom. Flip the dosa and cook the other side until it's cooked through and crispy as well. Remove the ghavan from the pan and serve hot with coconut chutney or your favorite chutney. Repeat the process with the remaining batter to make more ghavans. Enjoy your Maharashtrian-style instant rice dosa!
