A variety of curries, stir-fries, or grilled meats go well with the aromatic and flavorful Turmeric Coconut Rice. Turmeric and coconut milk give the rice a gorgeous golden hue and additional richness.
Ingredients: 1 cup rice. 1 1/2 cups coconut milk. 1/2 teaspoon turmeric powder. Salt to taste. 1 tablespoon coconut oil.
Instructions: Give the rice a good rinse in cold water. Rice, coconut milk, salt, and turmeric powder should all be combined in a pot. Mix thoroughly. After bringing the mixture to a boil, lower the heat to a simmer, cover, and cook the rice for 15 to 20 minutes, or until it is fluffy and cooked. When the rice is cooked, use a fork to fluff it up and drizzle it with coconut oil before serving.
