When I have the opportunity to check out a restaurant, it's never just a trip to fill my stomach. I'm looking to also satisfy my other senses and become inspired by the flavours. Most of the time, I go home and challenge myself to try to recreate some of my favourite dishes, but with a #RicksGoodEats twist! Sometimes I'll throw in the twist by mixing cultures with a fusion style, or I could even straight-out change major ingredients to reflect my tastes and inspire a brand new recipe. But, sometimes I just want to keep it classic. I was introduced to the Wakame salad as a starter at most sushi joints and fell in love with the flavours and freshness. With a little bit of research, a few trials (and of course errors), I got pretty close to the original with this seaweed-based healthy salad and awesome Japanese style dressing. Cinco de Mayo (Spanish for "fifth of May") is tomorrow, which means you should have had 5 shots of Tequilla by noon :) My wife found this recipe over a year ago, and when we tried it, it became one of our favorites. This Mexican street corn is the best! It's super easy, loads of flavor, and perfect for a warm summer day What you need 5 fresh corn, husked For the Spread: 1/4 cup mayonnaise 2 Tablespoons sour cream 1/2 teaspoon garlic salt Juice from one lime For the Topping: 1/4 cup grated Cotija cheese 1 teaspoon smoked paprika (or chili powder if you want heat) Chopped cilantro, for garnish Preheat your grill to medium heat • 375 degrees F • Place corn directly over heat • cook corn for 10-15 minutes and make sure to turn often, until you start seeing the kernels change color • while your cooking your corn, combine all the ingredients for the spread in a bowl • and topping ingredients in a separate bowl • open a bottle of Tequila and take 2 shots • when corn is done, take off the grill • have another shot • smear the spread over the corn cob • sprinkle corn evenly with toppings • and serve that corn ASAP.
