Back in the day working women always had a “basic black dress.” Something plain you could dress up or down, wear for dressy or casual occasions. Is it still a thing? It is for chicken, that’s for sure! You can dress it up or down. Season it with almost anything! Bake it, fry it, roast it, grill it. Chicken is the basic black of foods don’t you think? This version is one of my go-tos: roasted bone-in breast with ras-el-hanout and a few other basics. Here’s how: 1 bone-in whole chicken breast 2 teaspoons olive oil salt to taste 1-1/2 teaspoons lemon juice 1 small clove garlic, finely chopped 2 teaspoons chopped fresh mint 1/2 teaspoon Ras-el-Hanout 1/2 teaspoon grated fresh lemon peel 1/4 teaspoon paprika Preheat the oven to 500 degrees. Wash and dry the breast and place on a rack in a roasting pan. Brush with a film of the olive oil and sprinkle with salt to taste. Roast for 10 minutes. Combine the remaining olive oil, lemon juice, garlic, mint, Ras-el-Hanout, lemon peel and paprika in a bowl and set aside. Brush the chicken with the spice mixture. Lower the oven heat to 350 degrees. Roast for another 30 minutes or until cooked through (meat thermometer inserted into the thickest part of the breast will register 160 degrees). Let rest for 15 minutes before carving.
